Flourless Oatmeal Bake

Ingredients:

1 cup oats
1.5 Tbs Chia Seeds
1.5 Tbs Flaxseed Meal
1 tsp baking powder
1 Cup milk of choice
splash of vanilla
pinch of salt
1 tsp cinnamon
2 tsp honey or maple syrup
Blueberries and chocolate chips, measure with your heart





Instructions:

Preheat oven to 400. You can also do this in your air fryer if you'd rather.
Add all ingredients except blueberries and chocolate chips to a food processor or blender.
Blend for 30 seconds.
Pour ingredients into a greased oven safe dish. I used a round Pyrex about 8 inches in diameter.
Add your blueberries and optional chocolate chips.
Stir lightly.
Top with more blueberries and chocolate chips.
Bake for 35 minutes.

Let cool before enjoying. Refrigerate and enjoy - or eat it all in one sitting - no judgement.

Breastfeeding is freaking hard. I know there are mamas out there who love it and it just clicks for them right away. And, that's awesome. But, for some of us, we deal with tongue ties, latch issues, sensitivities, supply stresses, or you just plain don't want to. You're over touched and overtired. But, breastfeeding is also beautiful and nourishing and an experience that I'll forever cherish.

I was lucky enough to nurse Graham (age 4) until about 18 months. Not without its own challenges, but he was much easier than Landon (5 mos). With Landon we have dealt with latch issues and a severe tongue tie, which we had surgically corrected around 2 months of age. We also dealt with a Failure to Thrive diagnosis. Thankfully, my milk or supply was not the issue, an underlying Kidney infection was. However, the hospitalization and weakness he experienced from the infection did cause my supply to drop. We are now going strong with exclusive breastmilk - Landon (born in the 85th percentile) dropped to the 2nd percentile during infection and is now around 30th percentile exclusively from my milk. If that doesn't make me feel like a superhuman I'm not sure what else would!

Mornings at my house are absolute chaos. I have to be signed in to work as early as possible since I have to pick up the boys around 4-4:30pm. So I'm usually juggling one brushing teeth and one stuck to the boob until I finish the impossible marathon of getting them loaded in the car and off to daycare. When I get back, I'm usually ravishingly hungry. I've been exploring lots of easy, one pan breakfasts that can be reheated throughout the week. I always look for something nutritious that can keep me full until lunch. I'm a big fan of chia seeds in literally everything. They have no flavor but add a nice texture and tons of nutrients. I also love oatmeal, but sometimes I get sick of that grainy texture. So, I created this dish to give you the benefits of oats (stick to your ribs fullness) without the texture of oatmeal.
